ANZAC Day means different things to different people; I love that for one day a year, the history we share with our cousins in Australia becomes stronger and more authentic than usual on April 25th. ANZAC Day gives me a moment every year to think about my Grandparents and the realities they must have faced; and that ultimately the things that they lived through has paved the way for the incredible privilege and safe existence I recognize and am grateful for. My ultra cool Grandfather Monty was a decorated Navy man; and above that he was a Submariner…yes a Submarine officer, that blows my mind. Monty also, being the badass that he was during his service, swam away from two scuttled or torpedoed vessels – so yeah, hero level Grandadding there.

ANZAC Biscuits and their history I reckon are best summed up by the good ol’ Edmonds Cookbook:

During the First World War (28 Jul 1914 – 11 Nov 1918), the wives, mothers and girlfriends of soldiers were concerned about the nutritional value of the food being supplied to their men. Any food they sent to the fighting men had to be carried in the ships of the Merchant Navy. Most of these were lucky to maintain a speed of ten knots (18.5km/h). Most had no refrigerated facilities, so any food sent had to be able to remain edible after periods in excess of two months. The women came up with the answer: a nutritional biscuit. The basis was a Scottish recipe using rolled oats. The ingredients they used were sugar, plain flour, coconut, butter, golden syrup or treacle, bi-carbonate of soda, boiling water and the rolled oats. All these items did not readily spoil. At first the biscuits were called Soldiers’ Biscuits, but after the landing on Gallipoli, they were renamed Anzac Biscuits. A point of interest is the lack of eggs to bind the Anzac Biscuit mixture together. Because of the war, many of the poultry farmers had joined the services, thus eggs were scarce. The binding agent for the biscuits was golden syrup or treacle. As the war drew on, many groups such as the Country Women’s Association devoted a great deal of time to the making of Anzac Biscuits
